Dan Dan Noodles – China

A popular noodle dish from China’s Sichuan province. Sichuanese cuisine is known for being spicy and aromatic and dan dan main is one of Sichuan’s most popular dishes and is often eaten as a snack. The dish comes from local merchants selling it on the streets of Chengdu, with the ingredients carried on a bamboo pole which is called “dan” in Chinese – hence dan dan mian (bamboo pole noodles).

Some ingredients might be hard to find, like “dou ban jiang” and it is also common to add “ya cai” to dan dan mian. You can either try to find them in your local asian grocery store or you can just omit them as there is no real substitute.
